Snowflake Cookies.

Snowflakes
Makes about 4 dozen
1 cup butter, softened
1/2 cup powdered sugar
1 teaspoon orange extract
2 cups all-purpose flour
1/4 teaspoon salt
Additional powdered sugar
2-4 Tablespoons of granulated sugar on a saucer (I usually skip this)
Heat oven to 350 F. Beat the butter, the 1/2 cup powdered sugar and the orange extract in a large bowl with electric mixer on medium speed or mix with a spoon. I've always used a spoon and creamed the ingredients together until light and fluffy. Stir in salt until mixed in. Add flour and mix well. If the dough is too soft, cover and refrigerate one hour or until firm. I usually just leave it on the counter while I get the cookie sheets and the other steps ready. Grease bottom of a glass or a small bowl with a patterned bottom (I have one that looks like a snowflake.) with butter or spray with cooking spray. You will need to do this several times or whenever the glass starts sticking to the dough. Shape dough into 1-inch balls. Place about 1-inch apart on an ungreased cookie sheet. Press bottom of greased glass on shaped dough flatten until the cookie is about 1/4-inch thick. (You may first dip the glass bottom into the granulated sugar to keep it from sticking. I prefer the butter because it does not make the cookie get a harder sugar coating on top.) Bake about 10 minutes or until edges are light brown. Sprinkle with powdered sugar and remove from cookie sheet to a cooling rack. Cookies should be lightly sprinkled with powdered sugar once again after they have cooled.

I want to take this time to wish you a Glade Jul og Godt Nyt Aar. My Danish may not be correct but you will understand what I am wishing for you. It is hard to write in Danish anymore.

Two weeks ago we received ten-inches of snow. It was very beautiful. However, with the past two weeks, our day-time weather has been in the high forties (degrees), so the snow is almost all gone. In fact, I walked up the street to deliver some papers and on my way back my neighbors were out raking the leaves in their yard..

I still see Durfee at the temple twice a week. We both work together Friday Evenings and Saturday Afternoons. On Friday, we start at 2:30 p.m. and leave about 9 or 9:30 p.m. and on Saturday we start at 9:30 a.m. and leave about 5 or 5:30 p.m.

I am always impressed every time I enter the temple. I am sure you both get to listen to or view conference as it is broadcast in Denmark. I do not know if it is just because I am getting older, way older, or whether my understanding is improving but this last conference was so uplifting and challening.

What has been going on in your family--that is to say with your children and grandchildren?

Our families are doing okay, as far as we know. Starting from the oldest two the youngest. Shawn's oldest graduated from high school this last summer. He still has three in school. Melanie's oldest graduated from the BYU  a couple of years ago. She is working in Oregon. Melanie's oldest son is on a mission in South America. She has two in school, one will be graduating. Todd's oldest son will also be graduating from high school this summer. He will go to college for one year and  then go on his mission. Eric has four children and the oldest is in the ninth grade. The others are in grade school, AnnMarie has five children. The oldest still has one more year in high school then to college. The others are scattered throughout the different levels of school. Alysa, AnnMarie's oldest, has been selected to be in a choir that will tour Europe this next summer. I will let you know if they are coming to Denmark. Julie has three and four-ninths chidren. That will give us thirty-two grandchildren. What a clan! Her oldest is in the first grade. Kirsten has four children. Her oldest two are still in grade school. David has two children two are in grade school and one still at home. So much for Myrna and Leonard

Christmas Concerts

Alyssa and Kyle voice solos for private tutor at Hale Center Theater - tonight at 6:00.  Don't plan on coming, it isn't a big deal.  I will let you know when their Spring recital is.

Tues - Megan PHS orchestra concert at 7:30 (my calendar says 7:00, she keeps telling me it is at 7:30).

Tues - Kyle THS Band concert at 7:30.  Megan should play first, and Kyle last, so it is possible to make both if it goes right.

Wed - Matthew choir concert at 6:30 at Wasatch

Fri - Alyssa and Kyle singing at Temple Square at the JSB and the church by the Tabernacle at 4:00 and 5:30.

I am going to start telling you everything because the concert they had on the 2nd which wasn't supposed to be a big deal, was actually the Forgotten Carols at UVU and they were Michael McLean's choir for the show.  I thought they were just going to do an opening number, the tickets were really expensive, and it seemed to be so last minute that I didn't tell anyone.  I did get some pictures even though they said no pictures because I knew you would want to see them.  When they walked on the stage and took their seats I turned to Brandon and said, "They are actually in the show."  He nodded in surprise.  Then I said, "My mother is going to kill me."  He nodded yes.  Next year, we will buy more tickets.  This was something they were practicing at school during their free period ("intervention") so I had no idea it was this big of a deal.  Brandon was afraid they were going to take my camera because they said no pictures.

Melanie wrote: Not today. Howard and I have the only rooms that were available. Maybe in a few weeks. We'll let you know when we're released.

Myrna wrote: Goodness! You would think seniority would count for something. I am the one who is old and should get the room. The baby boomers, the ones born just AFTER the war are getting all of the attention but I think the ones born BEFORE WWII deserve it more. You shouldn't even be in the running. Much, much too young and vital.
