Snowflake Cookies.

Snowflakes
Makes about 4 dozen
1 cup butter, softened
1/2 cup powdered sugar
1 teaspoon orange extract
2 cups all-purpose flour
1/4 teaspoon salt
Additional powdered sugar
2-4 Tablespoons of granulated sugar on a saucer (I usually skip this)
Heat oven to 350 F. Beat the butter, the 1/2 cup powdered sugar and the orange extract in a large bowl with electric mixer on medium speed or mix with a spoon. I've always used a spoon and creamed the ingredients together until light and fluffy. Stir in salt until mixed in. Add flour and mix well. If the dough is too soft, cover and refrigerate one hour or until firm. I usually just leave it on the counter while I get the cookie sheets and the other steps ready. Grease bottom of a glass or a small bowl with a patterned bottom (I have one that looks like a snowflake.) with butter or spray with cooking spray. You will need to do this several times or whenever the glass starts sticking to the dough. Shape dough into 1-inch balls. Place about 1-inch apart on an ungreased cookie sheet. Press bottom of greased glass on shaped dough flatten until the cookie is about 1/4-inch thick. (You may first dip the glass bottom into the granulated sugar to keep it from sticking. I prefer the butter because it does not make the cookie get a harder sugar coating on top.) Bake about 10 minutes or until edges are light brown. Sprinkle with powdered sugar and remove from cookie sheet to a cooling rack. Cookies should be lightly sprinkled with powdered sugar once again after they have cooled.
