Kirsten's Pork Recipe

Pork
2-3 lbs pork (I've used loin, shoulder, butt, boneless ribs--you need heavier of its bone-in)
3 cans coke (not diet, but can be caffeine free)
1/4 c. Brown sugar
Dash garlic powder/salt
1 can diced green chiles
3/4 can enchilada sauce (I actually do a mixture of mild red and mild green)
1+ cup brown sugar
Directions:
1. put pork in heavy-duty Ziploc bag to marinate. Add a 1/4 cup of brown sugar and a can and a half of Coke. Marinate in the fridge overnight.
2. Drain marinade. Place pork, 1/2 can of Coke, and garlic salt in the crockpot and cook on low for 6 to 8 hours.
3. Remove pork from crockpot and drain any remaining liquid. Shred the pork. Return to the crockpot.
4. In a food processor or blender blend green chilies, half can of Coke, brown sugar and enchilada sauce. If it looks too thick add more Coke.
5. Pour sauce over shredded pork and cook for another hour to hour and a half.
Cilantro lime rice:
1 cup uncooked white rice
1 teaspoon butter or margarine
2 cloves garlic, minced
1 tsp. freshly squeezed lime juice
1 15-oz can chicken broth
1 c water
1 tbs freshly squeezed lime juice
2 tsp sugar
3 tbs chopped fresh cilantro
In a sauce pan combine rice, butter, garlic, 1 teaspoon lime juice, chicken broth, water and cook according to package instructions. Remove from heat. In a small bowl combine remaining lime juice, sugar and cilantro. Pour over rice And fluff with a fork.
Cilantro ranch dressing
1 packet TRADITIONAL hidden valley ranch mix
1 c mayonnaise
1 c buttermilk
Cilantro (to taste, I use only about 3 tbs)
1 clove garlic
Juice of one lime
1/2-1 jalapeƱo (optional) I usually do a 1/2, deseeded
Combine all ingredients in blender and blend until smooth. Refrigerate for one-hour.
Tickets for Brigham City Temple Open House
Hi, dear ones--just a note to let you know today I have gotten tickets for the open house, as we had spoken about--on Wednesday 29th August at 10:15 a.m. The tour takes about one hour-there is designated ushered parking with signs-- have arranged for a wheelchair for Eva. Due to family commitments Don/Thelma will not be with us. Then if you folks would like we will go Maddox for lunch, before returning home. The tickets are coming to me by mail soon-I will then mail your to you.

Update on Nanci's Health from Helen
Hi, dear family- to be sure you have had or still having a busy summer- with much family involvement which is wonderful. It is with Nanci's approval this information is being shared, regarding her current health situation. The vascular defect she was born with, which involves her whole body continues to get more involed- also for the past several years, the doctors' have identified, her blood work lends to a pre-dispostion to leukemia- this has been being medically followed closely. Very recently her Primary care physician had her have another bone density work up. The results are a serious concern- especially in her hips.- the bone density there is very minimal. The most concern is should she fall or in anyway break a hip she will be a very high risk for surgery for repair- also her immune system is very fragile, and has been for some years- she is extremely susceptable to any infections and doesn't have much reserve to fight it off. Also there is only one medication, an injectable very costly medication that can be given to hopefull build some bone density back over a period of time. Insurances do not pay for this - the doctor has written the innsurance and medicare to explain the great need and to have some financial assistance from them. As soon as he hears from them the medication can be started. It is one Nanci would inject herself. Possibly in about 6 months from starting there might be some report, on another density test, that there is some bone build up starting. Although this is of concern for us, Nanci, as usual, after the initial "Oh my "punch is up beat about it- with the doctor's encouragement continues her trips to the gym for careful exercies to help build muscle and flexibility, goes walking and is still working at jobs needing her talents for organization and for sight of what will be helpful for the employer and the company. Dave continues to be very supportive and helpful.
As we have Fast Sunday this Sunday we, Nanci and I, are asking each of you and your families to remember her and her doctors in your fasting-
Also, since I don't have all the e-mail addresses of your children will you please forward a copy of this to them, so they will know of the inviation to include her in their fasts and continued daily prayers also. I do have her name on the prayer roll at the Jordan River Temple - should you want to put her name on a temple in your area please feel free to do so.
